What sets the space apart is not just the mood but the architectural aesthetics by Principal Architect Gyanendra Singh Shekhawat. The rooftop is dotted with Rajasthani influences—chattris, jaalis and jharokhas—blended with clean, modern lines. Add to that its earthy textures, botanical elements and soft hues defining the palette that echo Jaipur’s sandstone glow and a celebratory ambience. 

 

The open-air and relaxed seating combined with refined service and thoughtfully designed environment create a fine balance between openness and privacy, and a rhythm that is unhurried. “The sweeping Aravalli views, especially at sunset, create a natural pause in the day. As the sky shifts through shades of gold and amber, the space transforms—encouraging guests to slow down and become present in the moment. The music is carefully curated to complement the setting rather than overpower it, allowing conversation, cuisine and cocktails to take centre stage,” enlightens Pandey.

Contemporary cuisine mirrors the space

At The Amber Terrace, guests are invited to savour modern Asian cuisine shaped by technique, flavour and emotion. Seasonal dishes come with a distinctive ‘root-to-fruit’ philosophy to make the experience very relatable.

 

Executive Chef Varun Parashar shares, “The Amber Terrace is shaped by its altitude and its attitude. Overlooking Jaipur’s timeless skyline and the Aravalli, the space invites food that feels light, sensory and free flowing. The open air, the golden desert light and the rhythm of the evenings guided us toward a menu built on freshness, fire, and clean Asian flavours. It is cuisine that breathes with the terrace—vibrant, contemporary and quietly luxurious.”

 

The culinary creations at the restaurant are designed to engage the senses. The menu ranges from Asian small plates with authentic regional and global flavours such as dim sums, robatayaki, sushi, teppanyaki, and the most inventive desserts. Some must-trys include Lamb Chops, Teppanyaki Mushrooms, Robatayaki Grills and sumptuous desserts.

 

Parashar gives his recommendations for special signature dishes. “Our signatures are crafted to celebrate both craftsmanship and comfort. The Truffle Tuna Tataki, Singapore Cereal Prawns, Flamed Avocado, Chiang Mai Pok Choi, DIY Lamb Bulgogi Tacos and our decadent Soy Chocolate Burnt Meringue reflect the soul of modern Asian dining—expressive, layered, yet effortlessly elegant. Each dish is designed to look beautiful under the Jaipur sky and taste even better in its breeze.”

 

The seasonal menus also have some Rajasthani twists in them. He notes, “Rajasthan inspires us deeply. We often weave subtle regional notes into seasonal specials from desert greens like sangri incorporated into stirfries, to local nuts, chillies and citrus brightening broths, curries and salads. These touches are never forced; they are quiet homages that bring Jaipur’s character into contemporary Asian cooking.”

And every cocktail is thoughtfully crafted to evoke stories, emotions and a multisensory delight, sustaining evening rituals and slow conversations.

 

The signature, root-to-fruit cocktails seamlessly merge contemporary techniques with the wisdom of ancient botanical traditions. The cocktails come in rare flavours and are crafted as botanical expressions ranging from Pink City Hues, Daulat’s Legacy, O-pm, Pipli Picante, Rajwada Legacy and Amer Amethyst.
