The concept and origin of Jamavar

Jamavar was originally conceived as The Leela’s flagship Indian fine-dining destination, offering a curated, heritage-driven culinary experience. The restaurant first began at The Leela Palace Bengaluru in 2001, and quickly became known for its opulent interiors and pan-Indian cuisine inspired by India’s royal kitchens. Drawing its name from the famed 16th-century Kashmiri Jamavar shawls (celebrated for their intricate patterns symbolising craftsmanship and luxury), the theme got carried into the restaurant’s design and culinary philosophy. Much like the textile that inspires its name, the restaurant too reflects artistry, tradition and attention to detail.

 

The ethos extends to the restaurant’s design, cuisine and service: meticulous craftsmanship, reverence for tradition, and luxurious presentation. Every detail—from décor and lighting to ceremonial hospitality—reflects the same dedication to artistry that defines the Jamavar textile tradition. Following Bengaluru, the Jamavar concept spread to other Leela properties in New Delhi, Bengaluru, Chennai, Mumbai—becoming one of The Leela’s most iconic Indian speciality restaurants—to its present place as a reimagining of Mohan Mahal. Its arrival in Jaipur marked an important milestone for the brand, bringing a unified Leela dining identity to the city while preserving the palace-like grandeur of the original space. The brand even moved internationally as a Michelin-starred Jamavar location opened in London’s Mayfair, putting Indian fine dining on the global stage.

Parashar explains, “Seasonal and regional ingredients play a key role in its evolution. Elements such as pippali from the Central Himalayas, Kashmiri morels (gucchi), kachri, fresh turmeric and ker from Jaisalmer showcase India’s regional produce. Seasonal ingredients such as bajra, makka, fresh turmeric, and regional vegetables are prepared using traditional techniques like dum and dhungarBaghar and tempering remain central to the kitchen, but are applied with modern precision to enhance flavour while maintaining authenticity. Curated vegetarian tasting menus and thalis further highlight India’s rich vegetarian heritage, ensuring that modern diners seeking lighter or plant-based meals enjoy the same level of luxury and flavour as traditional offerings.”
