Tucked in a quiet corner of the Grand Hyatt BKC, Mumbai, Solaire is the newest high-energy dining destination that blends global food, art, and atmosphere. By day, it invites lingering lunches; by night, it shifts seamlessly into a vibrant, glamorous bar scene.
Designed around warmth and movement, the space features an open kitchen, a striking mosaic bar, and lighting inspired by solar elements—an aesthetic that quite literally glows.

A power partnership of visionaries
Solaire marks the coming together of entrepreneurs Ishaan Varma and Amit Lakhyani with Bollywood icon Sanjay Dutt. Their shared vision shaped a restaurant that celebrates elevated flavours and refined comfort through global gastronomy and creative cocktails.
“The collaboration was a natural alignment of our vision,” they say of the partnership.
Despite his world being cinema, Dutt’s personal connection to food and hospitality played a key role in shaping the concept.
“Some of my fondest memories are around the table with family and friends. I’ve always believed that good food has the power to bring people together and create genuine emotion. That same belief has shaped Solaire, every detail, from the menu to the mood, reflects that sense of generosity and connection.”

Solaire inspires warmth, soul, and global influence
According to Dutt, the timing felt perfect. “Solaire was born out of the desire to create a restaurant that celebrates global flavours with Indian warmth, and elevates fine dining into something personal and soulful.”
What began as a shared idea soon transformed into a full-fledged reality. “The idea started as a shared vision, to create a space where world-class food meets true warmth and hospitality. We wanted to redefine what modern fine dining could look like — sophisticated but never intimidating, global yet rooted in a deep respect for ingredients and craftsmanship.”
Even the name carries intention. “Solaire means ‘of the sun’ — it represents energy, positivity, and life,” Dutt explains. It perfectly mirrors the restaurant’s philosophy.

The Solaire menu is structurally divided into mini morsels, soulful bowls, plant push, marine muse, farmland flamboyant, showstoppers, and sweet rememberance—with the ordinary dissolving into the extraordinary. There are Indian curries, Mediterranean mezze, Pan-Asian plates, and European creations. Think Asian Avocado Green Salad, Cannelloni, Clay Pot Cottage Cheese and Lamb Kebab. Each dish is a symphony of fire and finesse, a harmony of sunlit ingredients, global influences, and unrelenting craftsmanship.
